For most of human history, bread was not defined by wheat. Wheat was often a valuable crop, and in many regions it was considered a luxury grain. Not everyone could afford bread made entirely from wheat flour.

People baked bread from what grew around them and what was available in each season. Depending on the region, that could be rye, oats, barley, millet, buckwheat, legumes, or blends of different grains.

For centuries, bread was never about a single grain. It was about transforming a harvest into nourishing food.

These are the foundations that have turned grains into bread for thousands of years. We follow the same principles today. The difference is simply the grains we use. Instead of wheat, we work with buckwheat, oats, and chickpeas — naturally gluten-free crops with their own rich flavor, character, and nutritional value. That is why our bread is not an attempt to imitate wheat bread. It is a return to an older tradition of breadmaking — one where bread was defined by craftsmanship, fermentation, and patience rather than by any single grain.

Real Bread Blend Instructions

You’ll Need

  • 1 package of The Sixth Flavor – Real Bread Blend

  • 800 ml (3⅓ cups) room-temperature water

  • 2 tablespoons avocado oil or extra virgin olive oil

  • A mixing bowl

  • An electric mixer

  • Silicone loaf pans

  • Plastic bag or plastic wrap

  • (Optional) Your favorite dry add-ins:

    • Cranberry & Walnut

    • Cinnamon Raisin

    • Super Seeds

    • Chili Rosemary

    • Roasted Pistachio

The recommended amount for each flavor mix is provided separately.

Step 1 – Prepare the Dough

Pour 800 ml of room-temperature water into a mixing bowl.

Using an electric mixer on low speed, gradually add the Real Bread Blend 

to the water while mixing continuously.

Mix until the batter becomes completely smooth.

Let the dough rest for 2–3 minutes.

Step 2 – Add the Oil

Add 2 tablespoons of avocado oil or olive oil.

Mix again until fully incorporated.

Allow the dough to rest for 5 minutes.

Step 3 – Add Optional Ingredients

If making a flavored loaf, gently fold in your dry ingredients using a spoon or spatula.

Examples include:

  • Cranberries & walnuts

  • Cinnamon & raisins

  • Super seeds

  • Chili & rosemary

  • Roasted pistachios

Mix only until evenly distributed.

Step 4 – Fill the Pans

Divide the dough evenly between your silicone loaf pans.

Cover each pan loosely with a plastic bag or plastic wrap

to prevent the dough from drying out during fermentation.

Step 5 – Fermentation

Place the covered pans in your oven with only the oven light turned on.

Allow the dough to ferment for 8–10 hours.

Prepare the Potato Starch Glaze

While the dough is fermenting (or before baking), prepare the glaze.

Ingredients

  • 200 ml water

  • 1 teaspoon potato starch

Combine the water and potato starch in a small saucepan.

Cook over low heat for about 5 minutes, stirring continuously

until a thin translucent glaze forms.

Allow it to cool slightly.

Step 6 – Brush the Dough

Once fermentation is complete, gently brush the surface of the dough

with the potato starch glaze.

Let the glaze set for 10 minutes.

Step 7 – Bake

Preheat the oven to 450°F (230°C).

Bake at 450°F for 30 minutes.

Then reduce the temperature to 350°F (175°C) 

and continue baking for 1 hour and 5 minutes.

Step 8 – Finish the Crust

Remove the bread from the oven.

While still hot, brush the top crust with the potato starch glaze twice.

This creates a beautiful shine while keeping the crust soft and tender.

Allow the bread to cool completely before slicing.

For best results, allow the bread to cool completely before slicing.

This helps the crumb fully set and gives the best texture.

We’ve always loved bread — the aroma of a fresh loaf, the comfort of a warm slice, the simple pleasure of something made well.

Over time, we started questioning what was actually in the breads on store shelves — long ingredient lists, additives, added sugars, and processed fillers that left us feeling heavy rather than nourished. We kept looking for something better. When we couldn’t find it, we made it ourselves.

That decision became The Sixth Flavor.

Our goal is simple: to bring balance back to everyday eating through real ingredients, thoughtful process, and genuine care. We believe gluten-free bread should never feel like a compromise — it should be full of flavor, satisfying, and something you actually look forward to eating.

Our bread is naturally plant-based and fits a wide range of dietary needs, but that was never the starting point. The goal was always the same: make bread that tastes great and makes you feel good.

What Goes Into Every Loaf

At the center of every loaf are four ingredients: buckwheat, oats, chickpeas, and psyllium husk — the foundation of the bread.

We work with each in its whole form, allowing their natural character to shape the bread from the inside out — in a way that stays consistent from one bake to the next.

Buckwheat
Despite its name, buckwheat isn’t wheat — it’s a naturally gluten-free seed with a rich, earthy character. It forms the base of the loaf, giving it depth and substance. Naturally high in fiber and plant-based protein, it also contains compounds like rutin, known for their antioxidant properties.

Oats
Oats bring softness and balance. They contain naturally occurring beta-glucan — a soluble fiber associated with fullness — while adding a gentle sweetness and helping create the tender crumb.

Chickpeas
Chickpeas add body and heartiness. They contribute plant-based protein, fiber, and essential minerals like iron and magnesium, making each slice more satisfying.

Psyllium Husk
A natural plant fiber that works alongside the other ingredients to hold the bread together without gluten or eggs, giving it consistency and resilience.

Together, these ingredients create a natural balance — a bread that feels as good as it tastes.

We use small amounts of tapioca and potato starch for lightness, organic avocado oil for smooth richness, and Himalayan salt to bring everything into balance.
