Our bread is made the traditional way — with time, skill, and respect for ingredients.


We mill our own flour in-house from organic buckwheat groats, whole oat groats, and yellow mung dal (hulled mung beans), preserving their natural nutrition and flavor.

Each loaf is crafted in small batches using simple, clean ingredients and slow, natural fermentation — never commercial yeast or preservatives. This patient process develops deep flavor, an elastic crumb, and bread that’s easier to digest and naturally satisfying.

At The Sixth Flavor, we believe food should do more than satisfy hunger — it should nourish, energize, and inspire. Our mission is to reinvent everyday eating through organic, naturally gluten-free, nutrient-rich foods that bring balance back to the table.

We’ve always been bread lovers — the aroma of a fresh loaf, the comfort of a warm slice, the quiet joy of food made well. But over time, we began to question what was behind many of the breads on store shelves. Too often, they were filled with additives, added sugars, and ingredients that left us feeling heavy rather than truly satisfied.

That curiosity became our turning point.

We set out to create bread that feels simpler, clearer, and more in harmony with the body — bread made without wheat, commercial yeast, dairy, or eggs. These ingredients are among the most common sources of food sensitivities and digestive discomfort, and removing them allows the body to process food with less complexity. For many people, this translates into bread that feels lighter, easier to enjoy, and more compatible with everyday eating.

Our approach also makes our bread naturally plant-based and lower in allergen exposure, allowing it to fit comfortably into a wide range of dietary needs and lifestyles.

The Benefits of Our Bread

We begin at the very foundation by milling our own flour in-house from organic buckwheat groats, whole oat groats, and yellow mung dal — ancient grains and legumes that have been part of traditional diets for generations. These ingredients are valued not only for their flavor, but for their natural balance of plant-based protein, fiber, and minerals. By crafting our flour ourselves, we preserve freshness, integrity, and nutritional depth from the very start.

Buckwheat, despite its name, is not wheat. It is a naturally gluten-free seed that provides complex carbohydrates that support steady energy, dietary fiber that contributes to fullness and balance, and plant-based protein with a well-rounded amino acid profile. Buckwheat also contains naturally occurring minerals and plant compounds such as polyphenols, including rutin — a flavonoid studied for its antioxidant activity and its role in supporting normal blood vessel function. Buckwheat forms the foundation of our bread, giving each loaf structure, substance, and its distinctive earthy character.

Gluten-free oats, when carefully sourced and handled, contribute soluble fiber known as beta-glucans, which interact with water during digestion and help support feelings of fullness. Beta-glucans are also known for supporting normal cholesterol metabolism as part of a balanced diet. Together with other whole ingredients, oats bring balance and harmony while remaining nutritionally meaningful.

Yellow mung dal (hulled mung beans), a legume traditionally used in many global food cultures, adds further depth. It contributes plant-based protein that supports tissue maintenance and satiety, along with dietary fiber that supports digestive regularity. Naturally occurring minerals such as potassium and magnesium play roles in normal muscle, nerve, and metabolic function. Combined with whole grains, yellow mung dal helps create bread that feels grounding and satisfying without relying on refined ingredients.

From these thoughtfully chosen ingredients, we craft our breads and waffles by hand using clean, simple recipes. Our breads are naturally fermented, rising slowly through patience and care rather than commercial yeast. They contain no added sugar, while our waffles are gently sweetened with pure organic maple syrup for a naturally balanced touch.
