Our gluten-free bread is made differently. From the ingredients to the process, every step is handled with care.

We start with intention. Protein, fiber, and fermentation work together, giving the bread real flavor, a structured texture, and a satisfying feel.

Each loaf begins with freshly milled flour. We mill organic buckwheat, oats, and chickpeas in-house right before mixing, preserving their flavor, aroma, and integrity. The bread stays truly whole grain and fresh.

Buckwheat brings depth and structure with its earthy character and complexity. Oats add softness and balance, with beta-glucan. Chickpeas contribute plant-based protein, fiber, and minerals that make each slice more substantial.

The process matters just as much. Our dough develops slowly through natural fermentation without commercial yeast or starters, allowing flavor and texture to build over time. You can taste it from the first bite.

Buckwheat Despite its name, buckwheat is not wheat — it's a naturally gluten-free seed with a rich, earthy character that forms the foundation of every loaf we make. It provides complex carbohydrates for steady energy, dietary fiber that supports fullness, and plant-based protein with a well-rounded amino acid profile. Buckwheat also contains naturally occurring polyphenols, including rutin — a flavonoid recognized for its antioxidant activity and its role in supporting normal blood vessel function. In our bread, it brings structure, substance, and distinctive depth.

Oats Oats bring balance and softness. They contain beta-glucans — a soluble fiber that supports feelings of fullness and is recognized for its role in maintaining normal cholesterol levels as part of a balanced diet. Beyond nutrition, oats contribute a gentle natural sweetness and are largely responsible for the tender crumb and satisfying texture in every slice.

Chickpeas Long valued in cuisines around the world, chickpeas add heartiness and depth. They contribute plant-based protein that supports satiety, dietary fiber for digestive balance, and naturally occurring minerals including iron, magnesium, and potassium — each playing an important role in normal metabolic function. In our bread, chickpeas make every loaf feel genuinely sustaining.

Psyllium Husk A natural plant-based fiber that works in harmony with our other ingredients to help the bread hold together without eggs or gluten. It also supports digestive health and contributes to feelings of fullness.
